Rhubarb ideas

I have poached some rhubarb in lavender sugar, & want to top it with something interesting but not traditional crumble - anybody got any ideas?

If you look at Delia's pile it high rhubarb meringue. You could do similar - precook a sweet flan case then place your filling into the cooked flan and finish off with meringue.

Last night I made Rhubarb Crump, (the apple version recipe is the first on my recipe list) . So easy and give you a buttery shortbread type topping, I also mixed in some raisins, and cranberries, plumped up by soaking in grape juice. it was very well received .

Q of P's I meant that I added the raisins and cranberries to the rhubarb, not the topping.....should have made that a bit clearer sorry x

Thanks both - I did initially think meringue but I hadn't any cream to go with, but I do like the idea of the crump, so I'll try that - ta!

last week i made delias orange and rhubarb jelly - from her hot to cheat at cooking (the new one).

everytime i make it, it goes down a storm.

a rhubarb sweet cobbler is very nice too.

and some of your fancy cheffys, make a jus with rhubarb to serve with pork.

a rhubarb roly poly also works very well, just simmer the rhubarb down till quiet thick.

Rhubarb Crump

What about a frangipane topping (like that on Bakewell Tart) ? I think that would be lovely served with vanilla ice cream or even clotted cream......
