Freezing cakes

Freezing cakes

I am doing a tea for approx 16 for charity, I want to get prepared, does anyone know if eclairs freeze with or without filling, and other cakes and maybe scones.

I'm not an expert, but I would say that eclairs would freeze best without their filling as personally, I don't like double cream that has been defrosted (the texture is not as good when it's been frozen). But certainly scones are excellent for freezing. I've also frozen Victoria Sandwich cakes without the filling/topping and they seem to work well.

• Planning ahead: You can prepare, cook and freeze the &"233;clairs in advance; defrost 1 hour before needed, then fill and glaze them. You can also pipe the &"233;clairs and freeze them uncooked; bake directly from the freezer, adding an extra 5 minutes to the cooking time. The crème patissière (see below) can be made 2–3 days in advance and kept in the fridge.
