Mushrooms for Duxelles

I am struggling to find wild mushrooms for a Duxelle recipe.

Can anyone suggest which mushrooms would be a good alternative please.

I would follow this recipe as the dried porcini are easy to find in most supermarkets.

Mushroom for Duxelles


I tend to use the bog standard white/button mushrooms....and just dry fry in frying pan for a while......for extra special occassions i add re-hydrate merchant gourmet porcini mushrooms soaked in wine (whatever wine i have in cupboard)..for mini beef wellingtons i have also, used massive field mushrooms chopped very finely - using mini chopper...its all about the dry frying till they become a mush mass. quite ugly looking but packed full of flavour.
