Caramelized Apple Flan?

Caramelized Apple Flan?

Hi, I was recently watching an early TV programme of Delia demonstrating a variety of kitchen equipment and showing a few recipes. One of these was a quick apple flan she did in a frying pan with peeled, cored, (with a melon baller) and HALVED apples placed in the pan on a bed of brown(?) sugar and slowly cooked, then topped with a layer of pastry and finished in the oven.
I cannot find this recipe with any details anywhere online, most flans require sliced apples.
Has anyone else seen this recipe please? and if so please point me in the right direction. Thanks.

Hi, thanks for the tip but I've already seen this one. This is the classic French tart tatin as you suggested. In Delia's version the apples were HALVED, not sliced and layed down (rounded side down) in the sugar and the pastry laid over so that when inverted the apples formed little domes covered with caramelized suger.

smcf, I suppose that will be the only difference then, and if you remember that bit then you could possibly replicate the effect using the combination of recipes....worth a try?
I'm always changing the recipes around a bit, after all they aren't sacrosanct by any means, have a go and let us know how you fare ....Yummy

Hi Yummy. Yes I think this is just a slight variation. The only reason for enquiring about this was to get some more details. I suppose the quantities and cooking times can be worked out OK. Thanks for taking the time.
