Stuffed Chicken...

Has anyone got any ideas for stuffed chicken breasts. I often buy the breasts from our local butcher but the only ideas I can find always seem to include cheese which is something I do not eat.

Stuffing for chicken

Finely chopped herbs of choice, butter & finely chopped mushrooms?

Garlic & herb butter (think Kiev)?

Are you ok with cream cheese or is that also a no no? If you could stand it, I would use that as a base for herbs & seasoning.

What about finely chopped, skinned tomatoes & olives with basil & mixed with a little olive oil? You could make a tomato based sauce to go with it & serve with pasta? Or stuff with a little pesto perhaps?

Sausagemeat?

For a single, consider a leg/thigh quarter and a sausage in a casserole, mic for around five mins on 500W approx and you've got 'roast' chicken and stuffing. Gravy out of the tin, some frozen veg and you'll feel like a prince, or princess. To economise buy three birds for £10 and joint/bone your own (see youtube, it's easier than you would imagine).

I agree with all the above posters about ingredients to stuff a chicken breast with, and also with black pudding.

herbs and mushrooms (porcini soaked in any wine to keep breast moist)and onions and breadcrumbs with fruit of whatever floats your boat, i recently did grated apple in one of my stuffings for a chicken breast which did work. you could also if finaces allowed add pine nuts or cashew nuts. sausages is a great stuffing mix too, try the spanish sausages.

grated courgette is nice too actually, very tiny chopped peppers too with a bit of garlic and onion (blitzed in a delia chopper).

Thank you all for your replies, it has certainly given me some ideas. Sorry but I don't like cream cheese either but it's obviously a case of trying what you like and see if it works. I like the idea of the fruit.
