To freeze or not?

To freeze or not?

I am having a dinner party and want to make a Apple and Blackberry pie, but don't know if I can bake in advance and freeze it? Any advice?

Freezing Pies

Sporran, fruit pies freeze very well, both baked and unbaked. When I freeze them I cook them first and then reheat once they've thawed.

To freeze or not?

Yes, you can but pastry is never as good when it's been frozen. I make the filling and freeze in portions (plastic bags of portion size dropped into old ice-cream tubs). Whether you're making your own pastry (I am a sub-standard pastry-cook so tend to buy) or use shop pastry, it doesn't take more than a few minutes to defrost the filling in the microwave. It's what microwaves are especially good for. Consider blind-baking.

Freezing

Thanks so much for your advice. I will freeze because I have 10 people coming and its a lot to cook for
