no rise sponges

i use the extra light SR flour with additional 1 teaspoon baking powder,follow the 'all in one method' to the letter and STILL have flat sponges that don't rise,even when in the oven,which is a fan one. Any advice gratefully received.

What fat do you use? This is important have your fat at room temperature to get it light and fluffy.

But the best advice I can give you at the moment is to refer you to Delia's new Cookery School (free) where she shows you step by step how to make a sponge cake and discusses ingredients and equipment. I hope this helps:)

It is really important with sponges that they are mixed for a very long time, as my mom says, they must hold the figure 8 when you swirl the mixture with the beaters. Hope this helps

Sponges

The fat and sugar must be beaten until there is no grittiness of sugar in the mixture.

An all in one mixture should be beaten until it goes much paler.
