Keeping tinned artichoke hearts

Keeping tinned artichoke hearts

I like artichoke heart as an extra topping on pizzas but we don't eat very many (not good for the waistline, but lovely). I saw in Morrisons Green Giant tins (size of a regular tin of beans) for £2.25. That's way disproportionate to the worth of the pizza and we only need a little. The Green Giant was in brine I think I've seen it in oil, like Italian funghi, which keeps for ages. Where can I buy some or failing that how can I preserve the brined hearts to keep for, say, a month?

PS early digression - I haven't noticed fresh artichokes in the shops for ages. Have I just not noticed them or are they out of vogue? Decent restaurants used to serve them, haven't seen that, either, for years.

I think you could prolong their life in oil but you would be adding to the cost, personally I would prepare and freeze them on batches and take them out as I need them.

Then you'll have to bite the bullet and use them for something else once you've used the amount for your Pizza !
Loads of recipes if you Google, baked, roast, wrapped in bacon, antipasti salad.....endless possibilities.

p.s. they should be coming into the shops anytime now, the wet weather may have altered their timings, but they are a Spring crop, with another smaller offering at the end of the Summer beginning of Autumn
