Curried Chicken salad

This recipe asks to use curry paste but the jar states that the product must be cooked. I'm confused. Thanks

What recipe? Can't honestly say I fancy a curry with a salad but hey ho, whatever turns one on.

I use Patak curry pastes and yes, you do need to cook it in, ie sweat the onion, apple (if using) with garlic then introduce the curry paste. Mix whilst cooking for about 2 minutes before adding anything else. It's like using flour as a thickener, it has to be cooked.

Haven't you ever tried Coronation Chicken Salad, Thistle? It's a delicious lightly curried chicken salad as favoured by the queen and is on my personal list of faves!

I also make a slightly easier curried salad, but I'm afraid I have never used curry paste. Basically I just add curry powder/cumin/turmeric etc to chopped chicken with cut green onions and finely chopped celery, and toss with a mix of Hellmans and sour cream or yoghurt. Sometimes I mix in a little mango or apricot chutney to bring it closer to Coronation Chicken.

This is lovely served on a bed of shredded lettuce. Yum! Definitely one of my favourite salads.

Thanks for the reply. The recipe comes from The Delia Collection Chicken page 55 and states 1/2 tablespoon of Madras curry paste. But on the jar it states not to be eaten raw.

Many curry powders also say not to use unless cooking it first, and so do the curry pastes but I've used the pastes uncooked mixed with mayo and I'm still here. Coronation chicken is lovely.
