Caul alternative

Caul alternative

I have a recipe for cannon of lamb with spinach mousse.

The recipe says to layout caul and cover with spinach leaves, add the spinach mousse over the fillet and wrap the pork caul around the fillet and roast for 12-14 minutes.

My question is, can I use an alternative to caul e.g. foil?

alternative to caul

Caul adds fat and retains moisture. So, a fat substitute: lardo or something else fatty draped over the meat.

When you use caul it melts and dissapears into the dish (think faggots), I really can't think of any substitutes that would work as well. Maybe if you soak muslin in butter, or another fat, that might work. But why would you want to substitute? - can you not get it from the butcher?

Thanks both - I think because I haven't used it before I was a little afraid and was hoping I could use foil instead!
