Canapes

I am having party in the Autumn and want to have canapes and a buffet with a 'northern theme' - so far I can only think of Scouse - does anyone have any ideas? The venue will do the catering.

Cumberland/Lincolnshire sausages - could do mini toad in the hole.
Potted Shrimps.
Sticky Toffee Pudding.
Parkin.
Bakewell Tart.
Black Pudding.
Cheshire/Lancashire Cheese.
Manchester tart.
