Pickled Onions

A short time ago I posted a note detailing a problem I had with some pickled onions I made. The main problem was that they were far too crunchy. I just want to let you know that I suspect the onions hadn't cured long enough because they are now just delicious, with a wonderful bite to them.

Pickled onions.

Really? They have got to up there as the worst food of all time. Can't believe people would even consider eating them. How vile.

Pickled Onions

Interesting you should say that. I have an intolerance/allergy to many forms of onions but cheap standard pickled onions are fine. The posh crispy ones make me ill. I believe it's the chemical reaction between vinegar and the onion that takes time and produces a modified product. I could never eat my mum's home made, either.
