HOW TO TELL IF MINCEMEAT IS BAD?

I love making Delia's home made mincemeat. My last batch is a couple of years old and I can see that it has "settled" and there are some air holes in it. Is it still good, or should I toss it?

Usually the problem is fermenting if it has not been kept in a cool place. That will be obvious.

Or it will have dried out if it has not been well sealed. Otherwise it keeps for years, but can be revived by the addition of alcohol.
