strong flour

I tend to use s/r flour for scones but
was given a recipe to try and it states to use strong flour ,has anyone made them using strong flour instead of s/r flour and what are the results etc .just thought id ask .

Hi, I don't make scones but I know Paul Hollywood (baker) advocates using strong flour for scones. Gives a better bake I heard him say on the TV.

I use plain flour, with bi-carb and cream of tartar.
In France I used the flour that I used for bread making which I bought direct from the flourmill, It worked well.

Strong flour

I've now bought a bag of wheat gluten and want to use it to improve some stock of strong flour. My favourite flour is Waitrose Strong Canadian 15% protein. If the flour I want to improve is 12% do I simply need to add 3% by weight of gluten? i.e. add 3g protein per 100g flour?

well ive made the recipe for paul hollywoods scones made with strong flour and they were so nice ,well risen and so light ,recipe states 5 teaspoons baking powder but they turned out fab the best ive ever made .had them with jam and cream ooooh so nice .
