Macaroon help !

Does anyone have any experience of making macaroons with frozen egg white ? I've tried a few times but they always seem to turnout drier than the ones using fresh.

Egg whites

Maybe you are over-whipping them. The whip-ability of egg whites is greatly improved if they have been frozen; maybe they have been slightly dehydrated by freezing.

Macaroon help!

Thanks but I'm not whipping them at all. I've used the same recipe with fresh egg white and it turns out fine so I thought maybe the freezing would have something to do with it ?
