Simmnel Cake

How far in advance can i make a simmnel cake?

I believe they are traditionally for Easter, but i am hoping to make one for mothers day, but had designs on making it sooner rather than just before, is it possible?

I have made one a couple of years ago, where it had lumps of marzipan in the mixture, but i can't remember whose recipe it was, or what book/website i found it, are they all very much the same? or does anyone know where to guide me?

Simmnel Cake

I always regard it as a light fruit cake which I don't think keeps very well.

Usually the marzipan is baked as a layer across the middle of the cake.

Make a disc of marzipan slightly smaller than the circumference of the cake (keeping a proportion of the marzipan for either a Mothering Sunday decoration or an Easter Day decoration on the top of the cake), and place on the cake mixture. Cover with the remaining cake mixture and bake.

If the disc of marzipan touches the side of the tin it will burn.
