Arrowroot

I don't have cornflour for a lemon meringue pie recipie but I do have arrowroot. I seem to remeber using this when I made LMP at school in the 70's. So I'm sure I can use it however, the recipie calls for 3 tablespoons of cornflour do I use the same amount of arrowroot?

I actually prefer Arrowroot to Cornflour when making fruit dishes that need a thickening agent, particularly Lemon Meringue as I think it gives a nice consistency and effect to the lemon sauce. I especially like to use it when I make Chinese Lemon Chicken too.

3 tbsps sounds like a lot. You can add more...I always add with water mixed into the hot mix. Maybe start with two dessertspoons and see how you go.

Lemon meringue pie

You can also fill the pie with lemon curd - neither arrowroot or cornflour.

Either make the lemon curd or buy it.
