Fish problem

Fish problem

Yesterday I did Delia's parmesan-coated fish. The fish had been washed and dried, dipped in milk as per recipe then the flour/parmesan mixture and it coated it very well but it did not stick to the fish once in the pan but did stick to the bottom of it! It is a stainless steel pan. I served it without the coating then scraped the coating from the pan and divided out between the guests. The fish itself was lovely but the Romesco sauce didn't go down well.

Can anybody tell me why the coating did not stick?

No idea Wendy, but I've only done it once and never again!!!!! Same thing with me. Topping all over the pan, and no where near the darn fish!

I've made a note in the book not to make it again. I may try one of the other fish recipes but make it for ourselves first before doing it for visitors.

Don't think you'd have a problem if you first floured the fish, then dipped in egg, finally the parmesan mixture. Milk ain't sticky, egg is.

If I do escalopes of chicken, I always do flour, egg, breadcrumbs then into the pan.

This fish recipe calls for dipping the fish in milk then into flour/parmesan mixture. I've never done this dish before so I followed the recipe to the letter!

Fish problem

Stainless steel frying pans need to be "seasoned" just like cast iron ones to be non-stick. I redo my stainless steel one if Les washes the pan with a soap pad and doesn't just rinse it in very hot water like I do. Never have a problem with anything sticking to it.

Fish sticking

Liz from Cumbria, I've never had a problem with food sticking to the stainless steel frying pan, it was just with this particular dish it happened. The coating was easy enough to scrape off but it spoiled the look of this dish.

Thistledo, if I do the dish again I will do it my way with egg!

That's the way to do it Wendy; always give the originator the benefit of the doubt, first, lol.
