when to use onions? when to use shallots? I really can't see much in it myself. Can anyone enlighten me please?

Onions v shallots

Shallots are much milder and I also use them for aesthetic reasons when I want whole shallots in the finished dish.

Onions v shallots

I use those banana? shallots. Very easy to peel and chop. Love them and their sweetness. Ideal for casseroles and raw rings sprinkled on a steak maybe.

I use them in different dishes as I think they have a different taste, just as Spring Onions taste differently.
But it is just that, a matter of taste.

Onion or Shallot ?

I use onion in most dishes and use finely chopped shallot when making a sauce and for roasting whole to have with roast lamb. If I have a lot of shallots available then I will use them, but I agree with Elpe, they are fiddly to peel.

Shallots

Shallots and pickling onions are far easier to peel if you pour boiling water over them and leave until cool.
