Banana Bread

Hi, The recipe I use for my banana bread is from Bill Granger, in the illustration it looks a lovely dark brown colour, mine turns out quite light brown, would anybody know how I can make it darker. Its the best banana bread ever. Thanks

Hi, you could try using dark brown soft sugar in place of the light brown soft sugar, perhaps.

Thank you for your reply, I use caster sugar in the recipe but brown sugar sprinkled over the top. If i used brown sugar in place of the caster, do you think that would make a difference.

Banana bread....

I looked at a Bill Granger recipe in which it stipulated to use light brown soft sugar, hence I suggested the darker brown sugar. Both the brown sugars are fine, not like granulated sugar, so i think it will be OK. My only concern is that you really like the flavour of the cake with the recipe you have; using brown sugar might make a slight change to the taste. Try it and see. There are a lot of banana cake recipes out there.

I live in France now and have had to change and adapt where sugar is concerned and it has not really been a problem.
