Spinach rice dish

Does anyone have Delia's old Complete Cookery Book? I am trying to remember the vegetarian recipe for rice, spinach, onion and cheddar dish but no longer have that cookbook - help please

Spinach rice

This dish is, I think, risotto for spring in D's CCC (rice and other grains chapter) but not on this site.

Also in CCC (vegetarian chapter)is 'brown rice and vegetable gratin' but again, not on the site.

Over the years I've combined the two and it's a favoutite in this house.

Yes, I have the recipe in Delia's cook book.

I cannot find it on this site after a quick, cursory search.

The recipe is infeasibly long to type out so if you want it I can certainly pr&"233;cis it for you.

It is on Page 261 of the Cookery Course if anybody else is interested.

Thanks Welshcooke & Sue G for the ref. to p. 261. It states that it serves 2-3 people, though I would increase the rice amount to feed more as there are 4 of us. May try it tonight with roasted pieces of chicken and a salad. Sounds tasty. Thanks!

Baked Spinach with brown rice and cheese

450g fresh spinach, washed and chopped or 225g frozen spinach, thawed
225ml brown rice
1 teaspn butter
1 tablespn oil
1 onion finely chopped
450ml hot water
110g grated Cheddar cheese
2 large eggs, beaten
2 tablespn chopped parsley
freshly grated nutmeg
salt and fresh black pepper

2 tablespns wholewheat crumbs
1 tablspn melted butter
a couple of pinches cayenne pepper

Serves 2 - 3

Preheat oven to Gas 4 180 C
Heat butter and oil in pan and soften onion. Stir in rice and stir to coat. Add hot water, stir once then simmer for 40 minutes,covered, until tender.
When cooked, cool then mix with cheese, stir in eggs and parsley and chopped spinach. Season well and add some grated nutmeg.
place in oiled pie dish; mix breadcrumbs, butter and cayenne and sprinkle over the top. Bake in oven 35 minutes.

You must be a night owl to be posting recipes so late!!

It's actually very like a recipe I make sometimes - no exact recipe, but I think I adapted it from one years ago!!

I agree about frozen spinach. I often buy fresh and cook and freeze it for later - much better, I find.

Rice dish

Frozen spinach is excellent!!! At least the one I buy in Waitrose is. I use it for the spinach and ricotta lasagne as using fresh is far too much hassle.

Spinach and rice- what's it like?

I suggested the wrong recipes above but I've looked at the 'right' recipe now. I've never fancied it because I think the eggs would give it a 'solid risotto' type result.

Can one of you tell me what the finished dish is like, please?
