Dressed weight for cooking?

After (over)stuffing our turkey the weight has gone from 7.5kg (16.5lbs) to 10.0 (22.0 lbs) - what weight should I base the cooking times on....after 40 minutes at 425 degrees for 40 minutes? Mark



First bit of advice. Only stuff the neck end, not the body of the Turkey. And only put in enough stuffing to plump out the neck, do not ram it in.

Put any excess stuffing in a separate dish to cook. Also put what you were putting inside the carcass in a separate dish to cook. Much easier to serve and you do not run the risk of it not cooking through before the turkey dries out from over-cooking.
