Before cooking the turkey.....

How long before cooking the turkey do I need to take it out of the fridge? and does it depend on size?
Also how long do I cook a forerib of beef for?

Turkey at room temp

I get mine out a couple of hours before, but leave it in my unheated utility room. If the kitchen is hot I'd say an hour ... but it depends on size - for a chicken I leave only 20m or so, but if you have a pterodactyl to roast and/or a nice cool larder type space, bit longer.

Re rib of beef it depends on weight & how well cooked you like it. I like the inside rare so use a meat thermometer to get it to 50 to 55 deg in the centre.
