under cooked christmas cake

Hi, I have make Delia's irish whiskey fruit cake for several years now and it is fabulous. this year I have made 6" cakes and they are under done. Fairly evenly just slightly soggy - just too moist. Can I recook them?

I wouldn't. My family much prefer undercooked Christmas cake!

Under done cake

Yes certainly better than dry! But they were a little too glugy - definitely had that under done taste. Silly mistake. I've put them back in the oven anyway. Wrapped them well, started high for 20 minutes then down to 140 for another hour. They are darker and are cooling down now. Seem to be ok. Will check in the morning. They were very evenly cooked already - I didn't have a doughy centre, so I think this might have helped. Fingers crossed!!
