Dried yeast

Dried yeast

I bought some dried yeast and it states 1 x 7g packet = 25g fresh yeast sufficient for 500g flour. The recipe for milk bread calls for 15g fresh yeast or 10mls dried yeast plus 1 tsp sugar and 400g ordinary plain flour. Is it best to follow the instructions for the yeast ie 500g flour and adjust the liquid or measure out the yeast which would be fiddly to get the equivalent of 15g out then follow the recipe?

You need far less than it says. Yeast is a living organism and it reproduces.
