freezing double cream - why......

freezing double cream - why......

is it advised to whip double cream before freezing.

Is it absolute necessary to whip first?

I only need 5 tbspn worth from a tub, and have no immediate plans for the left overs, so thought of freezing in ice cube tray, so i can add to a gravy/sauce as and when i fancy it.

by the way, its elmea "diet" double cream i have.

Freezing double cream

Gotta tell you that Elmlea is not real cream. However, done some googling for you and it appears you can freeze it if you lightly whip it first. Good luck.

Don't know if it's true but heard you can use it in cooking but not as a topping. Hate cream so no experience using it.

freezing double cream - why......

If you want to use it whipped, you have to whip it, pipe it & then tray freeze it before storing the rosettes in bags/boxes. You can then lift out frozen rosettes for trifles etc & place whilst still frozen.

If you want to use it in cooking, then do the ice cube tray thing like you suggest, which is what I do. If you freeze it unwhipped they say it won't whip after it has been frozen - though I have never tried it.

I'm being provocative here. Why they are allowed to call it cream and why it is placed in the cabinet with cream is beyond me. Cream is cream and only cream.

Cream does not have to be made from dairy milk

I hate to break it to you but there are a whole host of types of cream, dairy cream being just one type. Moisturising cream for example, cream or nor cream?

Double cream

I don't care what they call it, I love Elmlea and always have some pots in the fridge . Really good in cooking and whipping, lower fat and calories and long shelf life . Personal taste of course, doesn't mean it's a bad thing , I really like the taste .

Freezing double cream

LOL you only wanted to know why it can't be frozen without being whipped....ya got if whether folk liked it or not and if its cream or not LOL.

I thought its because it might split if frozen runny but the other answer sounds more feasible that it won't whip if frozen unwhipped.

Freezing Elmlea

LOL! We use Elmlea mostly for its long shelf life. I've never considered the need to freeze it, it lasts so long. The pots I have in the fridge have a use-before end of June (we are 31st March today). I open, pour out what we want and cover the pot with cling film immediately back in the coldest part of the fridge (1C). It lasts for a good week (if we let it!). Folk who don't like it don't have to eat it, live and let live and so on.

Thank you all, and for the recent posters bumping this thread up.

In answer to my own question.

I froze the unused ELMLEA cream un whipped, in ice cube trays, and have successfully added a square at a time to various sauces - since my orignial post....if i was thinking of using for whipping - i would have brought new cream - and yes, i am not ashamed to say it would be Elmlea.....the only time i buy real proper fresh cream is at christmas to go with christmas pudding.

I do not care one iota that many on here think i may be uncouth or a philastine about using elmlea.... it suits me/us and our wants and needs and keeping functions.

but many thanks for those who responded nicely.
