Sausage rolls

I want to have some of these on hand at Christmas but the problem is that the sausagemeat is already frozen when I buy it, so I can't freeze the uncooked rolls. Do you think that if I partially baked them and then cooled and froze them, finishing the baking process when I needed them, that they would be ok and not tough?
Many thanks for any suggestions and advice.

I cook and freeze mine every year then simply pop in a medium oven as and when required.
Always fine.

Sausage Rolls.

Not that you need it, but I thought I'd confirm that I too do the same as Sandra. I cook mine but leave the pastry pretty pale, then finish the browning of the pastry on the second bake.

Thanks to you also James. I have made these every Christmas for years, but have never frozen them. I thought that just maybe I can get organized enough this year to get them made in advance.

I agree - Christmas wouldn't be the same without sausage rolls! My husband made a batch of them at the weekend, as well as the vegetarian ones. They are all tucked up in the freezer.

I have not tried making the vegetarian ones. Maybe I should make a batch of each, or rather 2 batches as I always double the recipe. They get wiped out so fast around here!
