Am I cooking my Dundee cake long enough

Am I cooking my Dundee cake long enough

I Have been making Delia's Dundee cake for several years and it says to cook for 2 to 2 1/2 hours. Mine is always cooked in 1 and 1/2 hours using the right size tin and correct ingredients except brandy instead of whisky, if I left it a further 1/2 hour would it get dry or just intensify the flavour?Beginning to wonder have I been doing the wrong thing all these years!

I thought it was me

Phew! I am the same. I have a fan oven and cook 20 deg less and bake it at the bottom of the oven.It only takes 1hr 15min max and like you it puts doubt in your mind but everything tells me its cooked.

Dundee cake

Different ovens give different results. Oh, for a perfect world! If you place a piece of tin foil over the top of the cake when you think it may be cooked, it will stop the top from catching. You can also use the butter wrapping paper over the top instead.

I also have a fan assisted oven and in fact, don't use that facility at all for cake baking.

The old idea of gently sticking a skewer into the middle of the cake, gently lifting it out to see if it's clean. 'Listen' to the cake as well. If it's still singing, it could do with longer.
