Dundee cake

I have been making deltas Scottish whiskey Dundee cake every Xmas for I don't know how many years from her original Xmas cookbook (I also have her new Xmas cookbook but it does not appear in this) however this year I have a new cooker and instead of cooking it with gas I shall be cooking it in a fan oven. The recipe gives the temperature for gas and electric ovens but does not give a temperature for a fan oven and this is the first time I have used one. Can someone help please?

most fan ovens cook quicker so you need to turn temp down by 10 or 20 degrees - my fan oven book gave recommendations about it, but if not I'd start 20 lower & watch like a hawk ...

My fan oven automatically adjusts and so I enter the temp as given in a recipe, so do make sure before setting on a lover temperature that it is not doing it for you. Could be disasterous!

Never heard of that before, Janice!! Intelligent ovens - sounds like a good idea though, as people are often asking how to adjust the temps.
Are they common in the US?

I really don't know Sonya, I have had mine for only a few years so I haven't looked at other ovens recently. It is a double oven, the lower one being a conventional one only and the top one (which I use most of the time) has a choice of conventional and convection (fan). The convection touch pad reads underneath "automatic recipe conversion" and automatically adjusts the temp 25 degrees lower than I set it. Yup, intelligent oven indeed!

Hi Jeg, I have only joined the site today and just posted a question about Delias's Dundee cake before reading yours. Mine cooks in 1 1/2 hours in my fan oven and I do get a bit concerned that I should be doing it longer even though it tests as 'done'. I only reduce the temperature by 10 degrees as most other cakes cook in the recommended time by doing this. I can only recommend that you test your cake before 2 hours!
