Wine Substitute

I don't drink alcohol by choice though I do use it in cooking.

My problem is this buy a large bottle of wine and I really have to dump more than half of it, buy the small bottles and it becomes very expensive. Is there a substitute I can use for red and white wine, something I can cork and go back to a week or a month later?

Have you tried freezing the leftover wine in an ice cube tray, pop it out and then transfer to a plastic bag?

A 3 litre box (around £15) will last several weeks, depending on how much you use, of course. I often have one in my kitchen.
