what is the best type of sherry to add to trifle ? so many to choose dark ones light pale etc i never can decide what to use for the right taste .any ideas thanks

I'd go by what you like the taste of. In any event it goes onto sweet sponge so it doesn't really matter if very sweet or medium. I generally have a Croft Original in at Christmas because it suits most palates when served in a glass, but I usually buy supermarket medium or medium dry for cooking & trifles (and I have a heavy hand for trifle I'm afraid - I love it boozy). I just wouldn't use a fino because I'd want that for drinking ...!
