Austrian coffee cake

Tried to cook my first coffee cake. The Austrian coffee cake from Delia's 'How to Cook'. Followed recipe, but there is no way the topping/filling was ever going to be the golden colour of the cake in the photo. Also used the right sized tins, but each layer isn't the same height as the one in the photo. We used Illy espresso coffee but this didn't seem to dissolve properly. Does anyone have any ideas where we went wrong. This is only our second cake & guess we just just want reassurance. thank you.

Hi,
this is now one of my fav cakes.
For some reason my sandwich tins got lost in our house move.

i make the cake in a cake tin and it works out fine. You can slice the cake when cold and then sandwich together.

I Also double the amount of walmuts.

As for the color, i don't think you will ever get the same color as the photo. Did you dissolve the coffee in hot water and then leave to cool.? i do the coffee before baking the cake, this way it is cold before adding to the cream.

Thank you. I did say it was my first coffee cake:-) The recipe doesn't say you dissolve the coffee for the topping/filling that's where I have gone wrong. Will use same quantity of water to dissolve as for sponge. Am learning by experience.
