Christmas Cake - Please Help!

I hope someone can help. I would like to make my Great Grandparents a christmas cake. Delia's receipe uses an 8 inch tin which I think would be too big for them. I was looking at using a 6.5" or 7" round tin and hoped someone to guide me how I can convert the receipe to these sizes. I did send an email nearly 2 weeks ago to "contact us" and now Im getting anxious that I may be leaving it too late!

Hi there.. with compliments... I know what I would do... Beg borrow or buy some smaller tins and use all your mixture... one for grandparents, one for you or one for a Christmas Present for someone.. I can almost smell the spices.. go for it ! P.S. While serving in the army in Cyprus I sampled a cake made by Navy Chefs (in Famagusta).. to me, at the time it was absolute heaven.. I'm sure your grandparents will feel the same way... it's a win win situation for you... (send a small bunch of fragrant flowers with your pudding) Above all keep smiling !.. from Scullery Sam.

If i was you - and i have done this.

I make the whole cake quantity as per delias tasty method.

and i split the mixture between 2 loaf tins (double lined and paper wrapped) use 1lb tins. i think from memory you can get 3 cakes.

then cook as per delias instructions but i would check after an hour, and then add 10 - 15 mins if still not cooked through, then another 10-15 mins, you get the idea - every oven is different.

I have found that its easier to decorate as i just marzipan the top, and ice the top, and pop on a decorative sprig of fake holly on top, and a christmassy ribbon around the girth of the cake, for those that like sweet, and then there is delias glazed nut or glazed fruit topping.

I would suggest you make up the said amount fill your chosen size tin and any mixture left over can be used in another smaller tin. This works well for me and gives me two for one! Good Luck



My fairly old & well thumbed Delia's Complete Cookery Course Book has a table for other sized tins - but not 7" so I calculated the ingredients and baked a 7" Delia Christmas cake - with great success: baked for about 3 1/2 hours (but your oven may need a little longer).
375 currents
125g sultanas
125g raisins
60g glace cherries
60g mixed peel
3tablespoons brandy
165g plain flour
pinch salt
1/4 tspn grated nutmeg
1/4 tspn mixed spice
165 unsalted butter
165g soft brown sugar
3 large eggs (or 3 medium & a little milk)
60g chopped almonds
1 1/2 tsn black treacle
1 grated lemon rind
1 grated orange rind.

what amount of black treacle do use in this recipe you put on here ,think im having a dim moment because i dont understand the amount ,anyway think il have ago at this size cake in next couple days thanks
