You should be using soft light brown sugar. If you use the dark with the black treacle the cake will come out much darker when cooking time is finished

On the recipe leaflet from the Waitrose cake kit (saved from last year) it clearly states 'Soft dark brown sugar' and the kit includes a pack of black treacle. I have always used dark brown.

I prefer to make the cake with light brown sugar - giving the cake a "lighter" appearance.

usually depends what i have most of in my cupboard.
