my lemon meringue pies taste and look fine but there is always a quantity of sugar water sloshing around in the dish - is this becuase i don't cook long enough or whisk eggs long enough or something else please?

Bobbie, I have encountered this problem too. Are you allowing the lemon filling to thoroughly cool before topping with the meringue?
Doesn't the runniness make your pastry go soggy? I ask because you say that the pie looks fine.

Have you ever done lemon meringue pie without the pie? Still makes a good pudding!

That sounds good Welshcookie. I find that the pastry is always somewhat soggy anyway whereas the lemon and meringue will stay fresh in the fridge. Trouble is I would eat far more if there was no pastry! One of my top desserts.

Lemon meringue

As I am not that good with pastry I used to make the pie with a homemade sponge flan base. My tin went a bit grotty and I've never replaced it. This thread has made me add one to the shopping list. I might look out for some individual tins too or maybe silicone.
