Anastasia, help please

I'm about to start your lemon marmalade. I want to include some fresh ginger. How much would you suggest? Thank you - and for your other preserve recipes I've made.

Ginger

I also use ginger with lemon.
This is how I do mine.
I allow a 2 inch piece of ginger for every 6 lemons , but of course to can use more or less, I like a hint of ginger rather than a blast.
I Peel the ginger then just tie in a piece of muslin as I hate to bite into even the tiniest piece, I like the taste would not want to chew it.
If you want the ginger in with the lemons then grate it & add.
It gives such a warm taste to the sharp lemon marmalade.

Winter chutney

Made this last year for the first time , & opened the first jar today.
It really tastes divine , Totally delicious, so have put the recipe on my profile if anyone would like to make it.
It is , by the way , my own recipe .
It has got a hint of heat in it , is also sweet.
I decided to call it winter chutney as I created the redipe & made it one day when the snow was falling.!!!!!
