Can anyone please explaine why when I make a loaf or rolls using the exact same receipe and ingredients, one day it will rise up and be lovely the next it will spread out and look more like a flat bread.

now i know there will be some that will give a very scientific reason for this.

and its not just murphys law.

but i do believe a lot has to do with indoor and outdoor temperatures and how far above sea level you are.

if its too warm, rise your bread in the bottom of the fridge overnight. if its too cold, leave in the warmest part of your home for an extra hour longer. and if you way up above sea level then well, i don't know as i am pretty close to sea level where i live.

its a living being bread - maybe it has its off days just like us.
