Homemade Christmas Mincemeat

I have also made her mincemeat and she says not to worry if it looks fatty/lardy after the time in the oven (which mine didn't actually, but since bottling it, I can see layers/strands of suet in the bottles. Is this "normal" and or should I be concerned about this?! I am thinking that perhaps come December when I make mince pies and cook them, the suet will "melt" away again?!

Homemade Christmas Mincemeat

When it comes out the oven all the melted suet will give the mixture a very oily appearance. It is important to mix the cooling mincemeat every now and again (particularly in the cooler phase) so that the suet "sets" over the pieces of fruit in order to keep their juices in and effectively allowing it to keep for longer. It does not seem so obvious once it's used in pies and in no way affects the flavour.
