Sugar-free xmas cake

Does anybody have a sugar-free recipe for fruit and nut xmas cake? I've been looking at recipes on the internet, but all seem to have additional sweetening agents.

Usually, I find xmas cake and xmas puds far too sweet. Surely they should be sweet enough with all that fruit without adding, sugar, honey or any other sweetener?

sugarless cake

Hi,

Sounds a little strange but search for some WW2 rationing recipes, as sugar was very short and lost of recipes popped up for sugarless cakes that used fruit as the sweetner.

Some wartime recipes used honey as an alternative but in very small quantities so perhaps you could leave it out?

I don't know how long a sugarless cake would keep though.

Hope that is of some sort of help, I will see if I can find any recipes in my ration cook books later.

oh i think your onto something there with WW2 recipes, i think.... they used carrot to add sweetness to cakes and puddings, am sure i saw a cooking show fairly recently where he cooked for the decades, and he did war time recipes and made a WW2 christmas dinner, trying to think of his name, tall skinny fella with moppy hair.

sugar fee xmas cakes

well, this does have black treacle in. not sure if that's allowed as you want it sugar free. from the ministry of food.

Ingredients

5 oz margarine
3 oz sugar
1 dessert spoon black treacle
2 eggs (free range for the garden of course!)
8oz plain flour 1 1/2 tsp baking powder
1/2 tsp mixed spice 1/4 teaspoon cinnamon
1/2 lb raisins
1/2 lb chopped dates
2 tsp milk


Method

Mix together margarine, sugar and treacle until creamed.
Beat in eggs one at a time.
Mix together flour, baking powder and spices.
Sift into butter mixture and fold in lightly.
Add in raisins and dates and mix.
Add milk and mix to dropping consistancy.
Pour into a lined tin ( I used a 7" round tin)
Transfer to oven at 140 deg C and bake for 2 1/2 hours or until cooked

Turn out and cool on a wire rack

Many thanks for the WWW2 tip. Will check it out. I do have a very good recipe from an old work colleague that I could maybe adapt - ie, miss out the sugar; I haven't tried it out myself, yet!
