Potatoes for roasting???

Potatoes for roasting???

I have recently moved from England to the US and cannot find potatoes for roasting the way we do in the UK. They roast little poatoes in the oven. They are nothing like our good old fashioned roast potatoes. Now that Christmas is around the corner.........help!!!

Potatoes for roasting

I don't know where you are Maz59, but here in Georgia I usually use russet potatoes. They are good for all uses though said not to be great for fries (chips) though I use them for fish and chips and they are fine. See what varieties are available where you are and try them out. The price usually determines which I buy as we eat a fair few potatoes which I prepare many ways. I tend to find that if they make good chips they will make good roasters also. Just my opinion. You have a little time to experiment before the big day! I have been here 20 years now and so have had time to adapt and substitute British ingredients that I can't get here.

Potatoes for roasting

In Canada Russet potatoes, they tend to be long and white fleshed but back up a treat. If you boil them for a few minutes and score them with a fork then put them around the roast, beautiful.
