Chocolate Mousse

I have tried following a Deli recipe but cant get it to work, my mousse is too dense.

It's not because of over folding the problem I have had is that when I fold the yolks into the chocolate the chocolate seems too solid. The choc is so dense at this point that when I add the egg whites there are lumps of choc in the mixture.

Instead of mousse Ive ended up with think chocolate pudding, tastes ok but its not the light fluffy mousse I was after.

Can anyone help?

Siezed?

Sounds like the chocolate might have siezed - if the difference in temperature between the melted chocolate and the beaten egg is too great, the chocolate goes into grainy lumps. This is always happening to me! Make sure your eggs are at room temperature, and that your melted chocolate has time to cool a bit before you mix them together.

Chocolate mousse

Having made this wonderful recipe more times than I care to remember and Delia's is the best, I feel I am well qualified to help!
I too have let the chocolate get too hot sometimes and I just add about a tablespoon of water, which seems to correct it. I say a tablespoon because I always make 8 servings, so use 1lb choc and 8 eggs. You want the choc to be quite hot in order to slightly cook the yolks. I also always use a good chocolate ( Tollhouse choc. chips here in the USA are good).
Try adding orange or mint flavouring - nice cariation when you make mousse as much as I do!
