tomato chutney

can anybody please tell me if there is a substitute for malt vinegar e.g wine vinegar? Living in Poland and wanting to make some chutney it is impossible to buy malt vinegar here. Also what spice do you have to add to the vinegar to make it into pickling vinegar?

Wine vinegar

Yes you can use wine vinegar , I often use wine vinegar instead of malt as I find it less harsh.

Spices

Sorry forgot to answer the second part of your question.

This is what I use in general , but you can make a mix of your own.
The basic for me is as follows,
Cinnamon stick,
mustard seeds,
Peppercorns.
cloves.
Allspice
Bay leaf.

I do vary mine , but this will give you a rough idea .
