Stupid computer

I means to say, my dad has a nice recipe for minted lamb which requires them to be marinated. However, when the chops come to be cooked, he throws the marinade away. I think this is a crying shame as there must be SOMETHING you can make of the marinade.

The recipe he uses is:
2 garlic cloves, crushes,
1 tablespoon olive oil
1 tablespoon mint sauce
2 tablespoons clear honey

He always says you cant use it as a drizzle because it's had raw meat in it. But there has got to be a sauce or something you can make from it.

Can anyone think of anything? Besides just heating it up to make it safe.

don't waste marinade

I'd sear the chops briefly, then do in a slow oven with the marinade, which I think would reduce to make a nice sauce.

Or, you could parboil potatoes for roasting, as usual, then coat them in the marinade, and then cook alongside the meat. The olive oil content should allow them to crisp up, I would have thought.
