Wedding cake used as christening cake?

Hello everyone, know I've not been around for ages, but what with getting married, starting my own yoghurt business and now giving birth to Lauren who will be 15 weeks tomorrow, I have been rather busy!

So I hope you can hlp, tried googling it and cant quite find the information I am looking for!

We have our top tier wedding cake in the freezer, it's a boozy fruit cake it wasn't de-iced, but wrapped in foil and in an airtight container, the cake will be 3 years old this December.

I would like re-ice it and decorate it in time for 21stOctober, when shall I take it out of freezer, it needs to defrost slowly presumably? Do you think it will need more booze, how will I know?

I don't want to do it too early and it to dry out but similarly I don't want to leave it too late, hope someone can help?!
