Pickling beetroots

Pickling beetroots

I have grown some quite respectable beetroots this year and pickled them in sarsons pickling vinegar. I added a bit of sugar to make them a bit sweeter but. . . yuk they are not nice tasting and have gone a funny light brown colour. Could it be the jars I have used (kilner jars)

This is how I do mine.

We only like sweet vinegar on beetroot.
Did you just put the sugar in without dissolving it.


I cook my beetroot , then peel , & slice.

I put my vinegar in a saucepan , add the required amount of sugar , the taste we like is 4 ozs of brown sugar to a pint of vinegar.
Allow the sugar to dissolve , bring the vinegar up to almost boiling point.
Put the beetroot into a very hot jar , I sterilise my jars in the oven on 160 for 15 mins , add the almost boiling vinegar , then seal.

You can also use honey in the vinegar, or a mix of sugar & vinegar .always dissolve.

This method produces a beautil semi sweet beetroot.

I use much the same system for my sister just omit the sugar as she relishes very sour beetroot .

Many thanks for your reply I have copied the procedure down and will try this next time. Yes I just put the sugar in the jars, do you know why they have gone a funny colour? I tried them with some salad today and yuuukkkk what a shame I have got about 5 jars

No idea.

Really I have no idea.
Beetroot is one of the easiest , most straight forward to pickle.
Did it bleed too much when you cooked it?
Then again you would have noticed that.
Hygiene is possibly the answer , sometimes even a sterilised jar can pick something up.
It is very important that lids are also sterile.

I use Kilner all the time , they are the best.
Cut your losses & start again.

Pickling beetroots

Could be that air entered the jars causing oxidisation. I use normal 'jam' jars, pot while hot then seal promptly. Check the blister on the lid - as they cool, you'll hear them pop. If not a seal is not secure and it will discolour. Good luck! PS. We prefer sweet beetroot.

Many thanks for that, think I will have to cut my losses as they really are not nice to eat. No they didnt bleed much when they were cooking. Better luck next year

Beetroot thanks

Many thanks for the advice will try with different jars next time, I used Kilner but I didnt renew the lids.
