how long can you keep it for? and how?

i have a lump of mozarella, its in a bag with liquid in (tesco). I have a recipe that only uses half, how do i keep the other half and for how long, should i keep in a bowl with the liquid?

Hi Sam

The mozzarella I buy here is only in 100g balls, individually wrapped, so there is never any left over. Having said that, the last pack I bought had two together, I used the second one the day after. I wouldn't be inclined to keep it much longer, not even in the liquid it comes in. I've no idea if it is detrimental to it or not, it's just my personal choice.

Yes, it is one of those cheeses that changes texture a bit, but thats not going to matter if you grate it and throw it over a pasta bake or pizza.

I'm glad you mentioned freezing it, James, as I wasn't sure as nobody I know here does freeze it. So at least if I have any left-over or there's a bargain to be had, I can pop it in the freezer. You are a star, James!

Like I said, its not perfect, but ideal for anything where it melts. I'd not use it to make a tom / basil / mozz salad for example, but at least the left overs get used up instead of in the bin.

I actually managed to use it the next day - hadn't thought of freezing it and you know how i love my freezer.
