Chocolate covered cherries

Hi - does anyone have a recipe for chocolate covered cherries please? I've been searching the internet but only found US recipes so far.

Chocolate covered cherries

The recipe I use is very easy, and my children loved to help make them. I make my own marzipan, and always end up with more than is needed. The remainder is used for chocolate marzipan cherries:

Take a small piece of marzipan, enough to wrap a glace cherry, dip in melted chocolate, either milk or plain, leave on a wire rack till the chocolate has hardened, then place in petit four cases and arrange on a small decoative plate or basket.

One word of warning...these are VERY moreish.

I am not sure what cherries to use? Can I use cocktail cherries or fresh ones?

I've never used fresh or cocktail cherries, but I'd suggest trying one or two of either to see if the result is alright. After all, recipes are only someone elses' experiments. You could even try all 3 types of cherry and see which you prefer. A friend soaks her cherries overnight in brandy, but that makes them unsuitable for children. I do put a small amount of brandy in the marzipan to help it keep, but not enough to be able to taste it.
