US cake flour equivalent in the UK

US cake flour equivalent in the UK

Can anyone please tell me what UK flour is equivalent for US cake flour. I found "sponge cake flour" in the supermarket here but I'm not sure if they are the same.
I want to make a cake but the recipe is American and asks for cake flour. I live in the UK and don't know what flour to use. I have found a website that provides instruction for making cake flour.

You want a soft flour, though it won't say that on the packet. Get plain flour (not strong, as that's for bread), and it'll be either plain or self-raising. Your recipe should tell you which is specified.

Cake Flour

is plain flour with the addition of baking powder.

measure the flour as per YOUR recipe - and remove 3 tablepsoon worth and add 3 tbsp ofthe baking powder

oh and double sift the flour to make it really airy.

I would like to say that 'cake flour' is not available in this country, at least it is not the same product that you would find in US. That is because in the US they are allowed to bleach the flour which is prohibited in this country. I use a lot of American recipes and there is a way of microwaving plain flour which will make a reasonable substitute for cake flour but it does take a time and is rather fiddly. A quicker and more straightforward method is to decrease the amount of plain flour in the recipe by twelve and a half per cent and replace it with cornflour or even better potato flour, not baking powder as a previous commenter said. This would ruin the recipe in my opinion. Hope this helps, I do it all the time and although the ideal would be to use cake flour this makes a good enough substitute.

Thanks for your replay Nenna. When I read the previous replay I knew that wasn't right, as I had researched enough online to find what "cake flour" really was. Yours make sense and really close to what I found online earlier and I am going to try that for sure. However, I've never found anything about microwaving method. Would you mind telling me about this method. I would appreciate it. Thanks

You will need to scroll down to find the information or type it in the search column, but you will find it easy enough. Sorry I am not very good at giving links!!!
