Tablet and the Diamond Jubilee!

Hello Everyone! This is my first time here - Happy Diamond Jubilee! Having a wee break from work for the holiday and trying to make tablet for the first time. I've followed the recipe carefully but have ended up with what can best be described as a cross between sand and cat litter!! HELP! I presume I passed the point where I should have stirred before pouring, but I was trying to follow the timings in the recipe. Can anyone please offer me some advice? Obviously I realise this includes 'start again'!! LOL! :/

welcome Heather. I hope you find the site very useful and will stay around.

I have never made Tablet before - and reading ingredients i know why, my teeth wouldn;t like this - far too sweet for me, like millionaire shortbread, yuck, lol.

but reainf the recipe and ingredients - i can only assume that either the sugar wasn;t totally dissolved or that you did not stir enough, says it can take up to 30 mins - i am looking at a good food recipe, seems very little that can or could go wrong.

maybe pour back in your pan and return to heat and give a good stir?

Hello again and many thanks for your advice. Interesting your point about the sugar not dissolving - I've checked out a few other recipes now and I realise that mine seems to have half the quantity of milk compared to others. ?? Given this I also think that the tablet was probably ready long before the half hour mark but I didn't recognise this. It has taken me ages to clean the pan :/ LOL!! ... but now I'm going to try again and this time I'll use more milk, stir constantly and turn the heat down a bit. Wish me good luck - I'll let you know how I get on! :) I wish Delia had a tablet recipe - everything I've ever made from Delia's recipes works out perfectly first time!! :)

Success!!

What a wonderful Thames Pageant today! Despite the weather the occasion was excellent! Looking forward to more celebrations tomorrow! Meanwhile I've finally had success with my tablet! On my third (successful) batch now :) After my initial disaster my second batch was better but there was room for improvement. Now that I know what I'm doing and what I'm trying to achieve I've done away with the timer and instead and watching for the changes. I've found it doesn't take as long as all the recipes indicate - mine is ready much more quickly but so be it - it looks and tastes great! I've found a new Christmas present to add to my repertoire! Thank you very much for your help and advice earlier - I will visit this site again! :)

Tablet


Glad you eventually got some good tablet. It would be useful if you could get a thermometer as your tablet should reach the soft ball stage (240 deg F, 116 C)(about 10 mins) before you take it off the heat and start the beating. When my thermometer broke I got this one from Lakeland. It doesn't alert you when it reaches the temperature but you will just have to check the temperature on the top of the handle.
