Delia's Roast Chicken

A week ago I used this Waitrose recipe card (March 2012) with disastrous results. The instructions said to roast the chicken with potato wedges and quartered red onions at a temperature of 230°c for 65 minutes without opening the door.

When the time was up, I opened the oven to reveal a dried out chicken surrounded by pieces of charcoal that had once been my proud wedges and onion quarters.

Where did I go wrong please?

Delia's or Waitrose?
Oven far too hot. Should have been turned down after 10/15 minutes. I haven't seen the recipe, but if it's Waitrose's, email them with the error.

I wouldn't do chicken this high and without basting anyway. I have a fan oven and I think D's recipes are all for non-fan ovens. You could add your comments to the others on W's site and/or query it on W's site's forums.
Sorry for wasted ingredients.

that has got to be an error - i would never cook a chicken that high ever, unless only for first 15 mins or something.

I would usually cook at 180c (fan).

Its such a shame, as delia recipes are so reliable - MUST be waitrose fault, lol.

Don't despair and be put off though.

You have now given me food for thought for the chicken i am going to cook today.

Sorry - I have only just noticed this post...

This is the correct temperature. Delia explains in her intro about it being fast cooking. (Chicken is only in the oven for 1 hour 5 mins)

We think your oven was too high and it sounds like it could be worth you buying an oven thermometer. Also the temperature in the recipe is for standard oven - not fan assisted, in which case you would need to adjust the temperature according to manufacturers handbook.

The recipe was tested numerous times by Delia and her cookery team as well as Waitrose and it was fine.

Delia's FAST Roast Chicken

I cook Delia's Fast Roast Chicken Recipe all the time. It always produces a lovely moist tasty dish. As Noreen says, the temperature is right and the chicken is in the oven for a comparatively short time. Although the oven does get rather dirty!

I never put anything with it, like your veg. as I think the temperature would be too high for them. The Waitrose recipe doesn't sound right, but I can assure you Delia's is great.

The Waitrose recipe is correct. It has been tested by Delia's cookery team and by Waitrose.

Delia's Roast Chicken

I did this recipe a couple of weeks ago without any problems.

It could be that your oven is getting hotter than it shoulld. Might be worth getting an oven thermometer to see if that is the problem.
